Saturday was not my best day of the week, but I tried my best. I got up at my usual time and had a cheddar cheese omelette made with two eggs. I also loaded up on a few glasses of water because I was going to meet Irish Kat at Bikram yoga. Class was from 9:30 to 11 and after changing out of my sweaty gear, I was feeling a little hungry. Sadly, I forgot to toss a quest bar in my bag for after class.
I had somewhere to be after class, so I didn’t have time to run home and get one. As a result, I stopped at Dunkin Donuts for my post Bikram unsweetened iced tea and I had a bagel twist. Now granted, it wasn’t a donut or a muffin, but I was a bagel full of 65g of Carbs… 2/3 of my day’s goal intake! The rest of the day I was careful with my nutrition. I actually was only over my goal of 100g of carbs by 22g. Not great, but not terrible.
For dinner tonight I have Cauliflower Crust Pizzas. I actually forgot that I had made the crusts earlier in the week and I was pretty psyched to try them out. Now, if you are a true thin crust NY pizza lover, but if you are someone who like english muffin type pizza, you might like these. They aren’t super crispy, this however may be my fault. It was my first attempt and I may have needed to squeezed more water out of my cauliflower. Regardless, as they were, the mini pizzas were terrific and they are only 12 carbs each! Below is the recipe incase you want to try them for yourself:
- 1 Head of Cauliflower
- 2 Eggs
- 1/2 C shredded mozzarella cheese
- Onion, Garlic, Salt and Pepper to taste
Cut up the cauliflower and steam until soft (about 7-8 minutes). Place steamed cauliflower in to the food processor and blend untill it reaches a mash potato like consistency. Pour the mixture out on to a clean, dry dish towel or cheese cloth. Squeeze all the excess water from the mashed cauliflower (Please let the cauliflower cool slightly before squeezing the water out so you do not inadvertently burn yourself with the water/steam) The cauliflower will actually look like a ball of dough after squeezing out the water. In a medium bowl, mix the cauliflower, eggs, cheese and seasonings. Lightly spray a baking pan and scoop 4 1/2 c servings on to the oiled pan. Bake at 450 degrees for 15-20 minutes or until golden brown. Take a 1/4 c of tomato sauce and 1/4 c of shredded mozzarella cheese to each crust and bake for 5 more minutes.
